Is there any way to predefine, perhaps as part of the nets' properties, what width to make tracks for particular nets?

I recall years ago (using a different package) that I could click on any net in the schematic and predefine things like the nominal width of copper to use when laying it out. Here I can add the net to a custom class, but I only get offered power, ground or signal options for that class.

Go into Design Technology and on the Net Classes tab you can add as many custom classes as you need.

Ah ok, you mean when you have the PCB layout up? If you look in the same place when on a schematic tab you don't get offered the same options! It's always confusing when different sections appear to offer similar options, but not really! You could ask "why would you want to define track widths from the schematic?", but to my mind I think it would be easier there?
