Is it possible to have 3 separate PCBs from one schematic file?

Trevor, not sure I fully understand your question.
1) you can "panalise" the 1 pcb outline (with 100% schematic) into as many pcbs as you like
and
2) the schematic split over 2 or more pcb outlines/profiles in one design, although your pcb manufacturer may get totally confused with the one Gerber plot file.

| I want 3 completely different PCBs in my project from one or more schematic files. So that I can generate gerber for each pcb separately and panelise, etc. Tpo be clear each PCB will be different but I do not want them all in the one PCB file. |

In that case, I am sure the answer is "no", with Easy-PC you cannot produce more than one PCB file from one (or more) schematics. In fact I can't at the moment think of any EDA software that can, at least not in that way to produce completely separate PCB files by splitting a Schematic.
I think you would have to look at stepping up to a bigger software package to even get something similar; our 'sister' product Pulsonix can do something like this at the plotting stage, by allowing you to define areas of the PCB design and then produce plots that crop their output to only include items within each area. Thus you can work with a single PCB file and produce Gerber files for two separate boards, but even then you would have issues with things like generating BOMs, nets like GND that are common to both boards still thinking they have unrouted connections, etc.
