Peter, first of all thanks for the fantastic tailored training last week in Tewkesbury. I learned a lot. Given the fact that I mostly would design audio amplifiers I was wondering if it's possible to start the PCB tracks on the bottom layer, were it default now to the top layer, maybe I'm just overlooking the option, but can't find it.

Try F2 (add track), then left click (to start track), then key "L" (layer options) and select the layer you require. EPC will then remember this layer as the "default" layer.
