Is there a way to increase slightly the offset of text versus its anchor point (the little cross that grabs itself on the grid) ?
Is there a way to customize this offset value ? It would be nice, especially for making labels more readable.

No, the offset is fixed. However, if you select the text with the mouse, and hold down the button, you can use the cursor keys to nudge it in any direction. Reducing the size of the snap reduces the nudge.
