Hi,
If you want to learn Easy PC, there are very very few tutorial videos.
But is it the case that the Pulsonix tutorial videos are relevant because Pulsonix is the same as Easy PC, but just with more features.?

For example, is this (below) Pulsonix tutorial about library part creation very relevant to library part creation in Easy PC?...

I'm sure that they may well be similar, -but there will also be differences. Rather than follow unofficial Pulsonix videos on line, I would suggest you invest a day reading and digesting the EasyPC manual. That way you won't end up following something that is not applicable.

Also, RS "DesignSpark" is a very very similar application (slightly cut down version of EasyPC) and there is an official RS forum available that supports this Product which you should find helpful.
